Session 2: Afternoon – From Harvest to Green Bean
Trace the coffee's journey from farm to roastery. Processing methods (washed, natural, honey, and beyond), sorting, grading, and green bean analysis, how processing impacts cup profile.
Highlight: Hands-on green coffee evaluation and moisture testing.
Session 3: Morning – The Art & Science of Roasting
Step into the roastery and experience transformation in motion. Roasting stages: drying, Maillard, and caramelization, understanding roast curves and development time, roast profiling and sensory balance.
Highlight: Live roasting session — participants roast their own batch under expert guidance.
Session 4: Afternoon – Cupping & Sensory Training
Refine your palate and connect flavor to process. Professional cupping techniques, aroma, body, acidity, and balance assessment, flavor wheel practice and defect identification.
Highlight: Guided cupping lab featuring multiple origins and roast levels.
